Old Cucumber, Corn and Pork Bone Soup

Why people make this soup

When spring arrives with its persistent drizzle, many people notice a familiar heaviness: limbs feel leaden, joints ache, digestion slows, and enthusiasm simply drains away. In Cantonese food-therapy tradition, this seasonal slump is linked to excess dampness in the body. A simple pot of old cucumber soup with corn and pork ribs is one of the most popular household remedies — gently clearing heat, supporting fluid metabolism, and helping the digestive system get back on track.

Old cucumber (the yellowed, fully mature variety rather than young green cucumber) is prized in traditional practice for its mild cooling nature and ability to support the body’s water balance. Paired with sweet corn — which is associated with supporting the spleen and aiding fluid movement — and carrot, which adds gentle nourishment, the result is a light, naturally sweet soup that the whole family can enjoy.

Who it suits / who should be cautious

  • Suitable for most adults and children; especially welcome during damp spring weather when energy feels low.
  • Old cucumber has a mild cooling nature; cook for the full time to moderate this. People who tend toward a cold constitution should not over-consume.
  • Pregnant women in their first trimester can drink this soup according to traditional guidance, but as always, check with your healthcare provider.

Why these ingredients (the food-therapy logic)

  • Old cucumber (lao huang gua): In traditional practice, associated with clearing heat, supporting fluid metabolism, and reducing internal dryness.
  • Sweet corn (su mi): Traditionally considered to support the spleen and stomach, and assist the body in moving excess fluid.
  • Carrot (hong luo bo): Thought to nourish the liver, support digestion, and gently descend qi.
  • Red dates (hong zao): Traditionally used to nourish the spleen and calm the spirit; adds sweetness to the broth naturally.

Ingredients (4–5 bowls)

IngredientAmountNotes
Old cucumber (fully yellow, mature)1 large (~500–600 g)Keep skin on; remove seeds
Sweet corn cobs2Husk removed, cut into chunks
Carrot1 mediumPeeled, cut into chunks
Red dates, pitted4–5 pieces
Pork ribs300 gBlanched in boiling water first

Method

  1. Scrub the old cucumber under running water. Do not peel — leave the skin on for extra benefit. Cut it open lengthwise and scoop out the seedy core, then slice into large chunks.
  2. Husk the corn cobs and cut each into 3–4 sections.
  3. Peel the carrot and cut into large chunks.
  4. Pit the red dates.
  5. Blanch the pork ribs in a pot of boiling water for 1–2 minutes to remove impurities; drain and rinse.
  6. Combine all ingredients in a pot with 8 bowls (about 2 litres) of water.
  7. Bring to a boil, then reduce to a gentle simmer and cook for 1.5 hours until the soup reduces to about 4–5 bowls.
  8. Serve hot, eating the solid ingredients along with the broth.

Bro Niu’s tips

This soup is naturally sweet and delicious — children and the elderly both enjoy it. It may also be helpful as a regular soup for those watching their blood pressure, blood sugar, or cholesterol. If you want to strengthen the dampness-clearing effect, add a small handful of red adzuki beans (chi xiao dou) and white hyacinth beans (bian dou) to the pot.

If old cucumber is unavailable in your area, chayote (Buddha’s hand squash) makes a reasonable substitute.

Community questions answered (selected)

  • Q (Yan): What does the red date do in this soup — and can I swap it for honey dates? Bro Niu: Red dates make the broth sweeter and provide a gentle spleen-nourishing, blood-supporting effect. You can replace them with 2 honey dates and it will work fine.

  • Q (May): Is old cucumber cooling in nature? Bro Niu: Yes, old cucumber is on the cooling side. As long as you simmer it long enough, it should be fine for most people including the elderly.

  • Q (anonymous): I am in early pregnancy — is it safe to drink this soup? Bro Niu: Old cucumber soup is generally considered suitable for the first trimester of pregnancy.
