Bro Niu does not use morels often — they are pricey, and there are plenty of other mushrooms for soup. But while buying Agaricus he picked up some morels too, the biggest grade; the shopkeeper opened the jar to let him smell them, and the fragrance was rich indeed. Morels carry vitamins and minerals like vitamin D, calcium and zinc, traditionally associated with supporting immunity and slowing the aging of cells — a comforting pot to nourish over time.

Method
- Rinse the morels, Agaricus and goji clean; peel and chunk the carrot; blanch the pork ribs.
- Combine everything with 8 bowls of water and simmer about 1.5 hours down to 4–5 bowls.

- Q (Susanna): My husband recently developed gastritis — what should he watch for? Bro Niu: Those with gastritis should eat on a regular schedule and never over- or under-eat. Green papaya traditionally protects the stomach lining and is good for soup, and monkey-head mushroom is also helpful for stomach troubles. If it is caused by H. pylori, dandelion tea is traditionally said to help; you can boil it as a tea substitute.
