Method
- Pan-fry the fresh fish in a little oil until lightly golden on both sides. Set aside. (Place in a mesh soup bag if desired for easy removal later.)
- Blanch the pork ribs briefly in boiling water; drain and rinse.
- Wash the fresh coconut; slice the flesh into pieces.
- Remove the bitter green centre from the fresh lotus seeds.
- Separate and gently rinse the lily bulb petals.
- Remove the pitted stones from the red dates.
- Place all the ingredients into a large pot. Add 8 bowls of cold water.
- Bring to a boil over high heat, then reduce heat and simmer gently for 1.5 hours until the liquid reduces to 4–5 bowls.
- Remove the fish bag if used. Serve hot and eat both the soup and the cooked ingredients.
Bro Niu’s tips
Fresh mini coconuts can sometimes begin to spoil during transport, so always inspect the flesh before use — the interior should be white, firm, and smell pleasantly sweet. If there is any off colour or mould, choose another one. The pan-fried fish can be placed in a mesh soup bag so you can easily remove it once the soup is done, making it simple to eat the lotus seeds and other ingredients without fish bones getting in the way.

Try cooking some red date and millet congee, or make a soup with Chinese yam (huai shan), lotus seeds, poria, euryale seeds (each 1 liang), dried tangerine peel, and red dates cooked with lean pork — this is a good family soup that strengthens the spleen and supports digestion.
