Sesame-Mustard Konjac Noodle Salad with Chicken

On hot days a heavy lunch is the last thing you want. Konjac (shirataki) noodles are mostly water and soluble fiber — almost no calories, yet genuinely filling — so they’re a favorite base for a light summer meal. Dressed with a bright sesame-mustard sauce and tossed with lean chicken and crisp cucumber, this cold salad is refreshing, appetizing, and a friendly choice when you’re watching your weight.
Method
- Blanch the konjac noodles briefly in boiling water, drain, and cool.
- Peel and finely julienne the cucumber; shred the cooked chicken.
- Arrange noodles, cucumber and chicken on a plate, pour over the whisked dressing, and scatter with toasted sesame. Serve (lovely chilled).
