Sesame-Mustard Konjac Noodle Salad with Chicken

Why people make this dish

On hot days a heavy lunch is the last thing you want. Konjac (shirataki) noodles are mostly water and soluble fiber — almost no calories, yet genuinely filling — so they’re a favorite base for a light summer meal. Dressed with a bright sesame-mustard sauce and tossed with lean chicken and crisp cucumber, this cold salad is refreshing, appetizing, and a friendly choice when you’re watching your weight.

Method

  1. Blanch the konjac noodles briefly in boiling water, drain, and cool.
  2. Peel and finely julienne the cucumber; shred the cooked chicken.
  3. Arrange noodles, cucumber and chicken on a plate, pour over the whisked dressing, and scatter with toasted sesame. Serve (lovely chilled).

Nourilo’s Tips

The sesame paste with mustard and a touch of rice vinegar is wonderfully appetizing. A plate of konjac noodles in summer is a tasty way to support slimming.
