Sesame-Mustard Konjac Noodle Salad with Chicken
A low-calorie, satisfying dish to support slimming
Why people make this dish
On hot days a heavy lunch is the last thing you want. Konjac (shirataki) noodles are mostly water and soluble fiber — almost no calories, yet genuinely filling — so they’re a favorite base for a light summer meal. Dressed with a bright sesame-mustard sauce and tossed with lean chicken and crisp cucumber, this cold salad is refreshing, appetizing, and a friendly choice when you’re watching your weight.
Who it suits / who should be cautious
- Anyone wanting a light, low-calorie but satisfying meal, especially in hot weather.
- Konjac is very high in fiber — introduce it gradually if your stomach is sensitive, and drink plenty of water.
Why these ingredients (the food-therapy logic)
- Konjac noodles: very low calorie and high in fiber, helping you feel full on little energy.
- Cucumber: cooling and hydrating, ideal for summer.
- Lean chicken: adds protein so the dish satisfies.
- Sesame & mustard dressing: big flavor for very few calories, so a light meal still feels like a treat.
