Method

  1. Peel the tough skin from the asparagus and cut into segments. Wash and chunk the peppers; cut the tofu-skin rolls into pieces.
  2. Heat oil and fry the minced ginger until fragrant.
  3. Add the asparagus, peppers and tofu-skin rolls; stir-fry until fragrant.
  4. Splash in a little wine, add a splash of water and seasoning, and cook briefly.
  5. Scatter in the spring onion, toss a few times, and serve.
