Stir-Fried Asparagus, Tri-Color Peppers and Tofu-Skin Rolls

Why people make this dish

Bro Niu loves cooking with asparagus, especially around Lunar New Year when it is in season. It is prized for being rich in protein and folate, and is traditionally valued for its antioxidant qualities. This bright, fresh plate pairs it with sweet peppers and tofu-skin rolls for a light everyday meal that is easy on the body.

Who it suits / who should be cautious

  • Suits anyone wanting a light, low-fuss vegetable-forward dish; traditionally considered friendly for people watching blood sugar, blood pressure, or fluid retention.
  • No specific caution noted; as with any dish, adjust seasoning to your own needs.

Why these ingredients (the food-therapy logic)

  • Asparagus (lu sun): Light and nutrient-dense, traditionally associated with supporting the body’s natural balance; easy to cook and works in both vegetarian and meat dishes.
  • Tri-color bell peppers (san se tian jiao): Add color, crunch and a fresh sweetness.
  • Tofu-skin rolls (fu pi juan): A light source of protein that soaks up the wok flavor.

  3. Add the asparagus, peppers and tofu-skin rolls; stir-fry until fragrant.
  4. Splash in a little wine, add a splash of water and seasoning, and cook briefly.
  5. Scatter in the spring onion, toss a few times, and serve.

Bro Niu’s tips

Asparagus is easy to cook and takes well to creative flavor variations — it works for both vegetarian and meat-based dishes. If you cannot find thick spears, slimmer asparagus works just as well.
