Method

  1. Rinse the ophiopogon root and goji berries briefly under cool water.
  2. Combine the ophiopogon root, goji berries, and water in a small saucepan. Bring to a gentle boil, then reduce heat and simmer for about 40 minutes.
  3. Add the American ginseng slices and rock sugar. Simmer for a further 3 minutes — do not cook ginseng for too long or the volatile aromatic compounds dissipate.
  4. Strain or drink as is. The goji berries and ginseng slices can be eaten.

Alternative — thermos infusion: Place all ingredients in a thermos flask. Pour over boiling water and seal. Infuse for 15 minutes before drinking. Refill with hot water as needed until the flavour fades. This is a convenient option for desk or office use.

  • Because American ginseng has a mild energy-boosting effect, drinking this tea earlier in the day (morning to early afternoon) is preferable to avoid any interference with your evening sleep.
  • If you prefer, you can swap American ginseng for Chinese codonopsis (dang shen), which is warmer in nature and gives a more tonifying, slightly richer flavour. Simply steep thin slices in the same way.
  • This tea is especially comforting in winter — the goji berries turn the liquid a beautiful amber-red.
