Method
- Soak the bamboo fungus in warm water; cut off the netted “skirt” and the foot, then cut into sections. Soak the snow fungus soft and destem. Slice the mushrooms, carrot and cucumber.
- Heat oil and fry the shredded ginger until fragrant; add the bamboo fungus, beancurd sticks and other ingredients and toss.
- Add vegetarian stock and seasoning, braise briefly, finish with a thin starch glaze, and serve.
Bro Niu’s tips
Bamboo fungus is called the “queen of mushrooms.” When buying, choose pieces sold individually that are good and dry, springy when pressed, with no sharp chemical smell. The netted “skirt” you trim off is also nutritious — save it for soup.

For a weak spleen and stomach, simmer dang shen, bai zhu and fang feng (3 qian each), fu ling 4 qian and 4 slices licorice in 5 bowls of water down to 2, taken over a day as a tea, twice a week. For the whole family, add lean pork and red dates.
